Dutch Baby Pancake

 

 

When I was in my 20's I had a boyfriend that took me to Walker Brothers Pancake House often. It was so popular that people would wait an hour in line every weekend. 

It was there that I fell in love with Apple Pancakes and Dutch Babies. 

The Dutch Baby looks like a big pastry bowl. Very strange if you have never seen one. But its actually light and delicious. 

You will need a cast iron skillet, or oven proof skillet.

1 cup whole milk

4 large eggs

2 teaspoons pure vanilla extract

1/4 teaspoon salt

1 cup flour

2 Tablespoons butter

 

Place rack in the middle position in the oven and preheat to 425F. 

Whisk milk, eggs, vanilla and salt in a large bowl. 

Whisk in flour. Let it sit for a minute and whisk again. Or use a hand mixer on low to make batter smooth. 

Heat butter in a 10 inch oven proof skillet until light brown.

Pour the batter into the skillet. 

Bake for 15 to 17 minutes.

Leave the Dutch Baby in the oven. Turn temperature up to broil. 

Broil for a couple of minutes until very puffy and golden brown. 

Serve immediately. 

It is traditionally served sprinkled with powdered sugar, and freshly squeezed lemon. Simply take half a lemon and squeeze over your pancake. But you can serve it with pure maple syrup, or fruit syrups.
