Lunchbox Chef Salad

1 large tomato cut into thin wedges (12 or more)

¼ cup thin red onion slices

¼ cup cucumber slices

1 hard-cooked egg, chopped

2 cups lettuce (anything but iceberg)

¼ cup mozzarella cheese cubes

1 tsp. crumbled bacon

2 Tablespoons Italian dressing

2 containers

 

Place 1 tablespoon of the dressing in the bottom of each container.

 

Put ½ of the tomato slices in each container and toss the tomatoes to coat with dressing.

 

Layer the rest of the ingredients, half in each container.

 

Cover container.

 

When ready to eat, open container and mix salad.
