Standing Rib Roast

3-4 lb. Roast.

Season roast with salt and pepper.

Place roast on an open rack in a preheated 375 F. oven for 45 minutes.

Turn off. Leave it alone.

45 minutes before dinner – turn oven back on.

Add 1 cup water to pan drippings to make Au jus.


For a 10-12 lb. Roast, allow 60-70 minutes for the second cooking period.
