Down Home Comfort Chicken Dinner

This one takes about 45 minutes to table.

4 boneless, skinless chicken breast halves

¼ cup Italian dressing

2 cups baby carrots

1 medium onion cut into wedges

1 can low sodium chicken broth

2 cups brown rice, uncooked

4 oz. neufchatel cheese

optional – chopped fresh parsley to make it look pretty


Heat dressing in a large skillet over medium heat.


Add chicken and cook 5 or 6 minutes until browned on one side.


Turn chicken. Add carrots, onions, and 1 cup broth.


Cover and simmer for 20 minutes.


Meanwhile, prepare rice according to package directions.


Place rice on serving platter.


Remove chicken and vegetables from skillet with slotted spoon and place on rice.


Cover platter and put in oven to keep warm.


Add cheese and remaining broth to skillet. Increase heat to high.


Cook – stirring constantly, until cheese is melted and sauce is smooth.


Reduce heat and simmer sauce for 3-5 minutes until slightly thickened.


Spoon sauce over chicken and rice. Sprinkle with parsley if you want.
