Herb Roasted Beef Tenderloin

2 ½ to 3 lb. Beef tenderloin

2 Tbsp. Oil

2 cloves garlic, minced

1 teaspoon fresh ground black pepper

4 sprigs fresh rosemary

4 sprigs fresh oregano

4 sprigs fresh thyme


Preheat oven to 250 F.

Drizzle roast with oil.

Rub roast all over with minced garlic

Sprinkle with pepper

Put herbs in the bottom of a 13x9x2 baking pan

Place roasting rack over the herbs

Put roast on rack

Roast uncovered for 20 minutes

Increase temperature to 425 F

Roast until thermometer inserted into the thickest part of the roast reads 135 F. (about 30-40 minutes)

Remove from oven and cover loosely.

Let stand for 10 minutes.

Makes 8-10 servings.
