For many people, giving up meat even one day a week is a real sacrifice. It takes some getting used to. For those of you giving up meat on Fridays – you might want to try these 'you won't miss the meat' suggestions -

Spanish Omelets

Fresh Spaghetti Sauce (no meat)

Fake baked Mostaccioli (a fast favorite of mine!)

Pecan Crusted Salmon (or any of the other seafood recipes :)

Tuscan Beans and Tomatoes

 

You could make wraps with refried beans, cheese, lettuce, tomato, onions, olives...

There's always great salads, or tuna salad subs.

We don't ever have to be bored!
