Last time I was at Walmart, I picked up some Great Value Organic Petite Diced Tomatoes and the tomato paste. The can says certified organic, and the can is BPA free. hmmm.
Now Great Value has always been synonymous with bad ingredients and bad taste, so I wasn’t feeling too optimistic The cans sat in the cabinet for a couple of weeks.
I decided to make Chicken Parmesan, so I finally used the cans.
When I opened the cans, they smelled good. .Nice rich tomato smell.
I made the sauce. The paste was pretty thick.
I put it all together and I really meant to take a picture, but we ate it before I remembered. It was really good!
All I did was saute’ a chicken breast in some olive oil and garlic while I boiled the pasta. I don’t bread the chicken. Too much work!
You place the pasta on the plate. Put 1/2 of the chicken breast on top. One good sized chicken breast is enough for 2 people. Top it all with plenty of sauce. Make sure the sauce is nice and hot. Sprinkle with shredded mozeralla cheese and let it sit for a minute so the cheese melts. Serve with salad.

1 can petite diced tomatoes
2 cans tomato paste (the small cans)
3 cans water
2 teaspoons garlic powder
2 teaspoons basil
5 or 6 grinds black pepper
Mix very well.
Bring just to a boil.
Lower heat, cover, simmer for 30 minutes.
The sauce is always better the next day. Its best to make it the night before.
