Missing Weekly Rants

I know, you’ve been missing my weekly life rants, haven’t you?

 

For the last few weeks, I’ve had some really bizarre schedules at work. Open one day, close the next, open the next…

 

That means every other night I get home at 10 at night and have to walk hyper-dog. So, it’s around 11 before I get to sit down – and I work on my feet all day. Grab a snack, check email, take a shower, go to bed so I can get up the next morning, feed the dog and cats, walk dog, and to back to work. It’s like losing a day every other day. Crazy.

 

We’ve had 2 nice days, I mean warm enough to not wear a jacket. Otherwise, it’s still been in the 40s pretty much every night. Still so cold. That’s been getting to me too. It’s been cold for a long, long time now. I’m so tired of it. I hear it’s actually going to get warm next week. I can’t wait!

 

The baby geese have hatched. I hate having to clean up after them all, but they sure are cute. Unfortunately, one died. In my yard of course. Never a dull moment!

 

The yellow lilies my daughter got me for mothers day are in the ground and blooming away. They’re so pretty J

 

My daughter has a choir concert tomorrow. I’m looking forward to that. I like to be present at as many of her life events as possible.

 

She went to her first prom a couple of weeks ago. I can’t believe it. Isn’t she still just 4 years old? And then they broke up a week later. Poor kids. It’s so hard at that age! But we have the dress for the next dance on layaway. Since I work at DressBarn, I get first dibs on the newest dresses! Good thing too – size 4s are hard to come by. Size 0 and 2s are even harder to come by – at least without paying a small fortune.

 

Boo-hoo you say? You just wait. If you’re following my lessons, this time next year you might be having a hard time finding clothes too.

 

I’ve been wanting to get back to body building. I look like stick woman these days. I guess we’re never happy, are we?

 

I’ve been disappointed in the blog format for this site. It’s not as functional as we need. I’m working on a better solution – but you know me and technology. And this system is a BIG leap for me. Plus, I have 2 new ebooks started.  Can you say work-a-holic?

 

And the house is clean. Yes, I’m still a clean freak on top of it.

 

Maybe psychotic is a better word?

 

Anyway -  that’s the highlights. Don’t want to bore you too much!

Someone calculated the cost of printer ink – by the gallon, to be

 

$5,200.00!

 

So, the next time you’re at the pump, be glad your car doesn’t run on bottled water, Scope, White Out, Pepto Bismol, Nyquil, or god forbid…Printer Ink!

 

Just a little humor to help ease the pain of your next trip to the pump.

 

And if you don’t pass this along to at least one person, your muffler will fall off!

 

Okay, your muffler won’t really fall off… but you might run out of toilet paper.

IRS Scam Warning

I just got one of those IRS Scam Emails, and I wanted to make sure that you know that you don’t have to fill out any online forms to get your stimulus payment.

Do not click on a link in an email and fill in any personal info!

The email was from the Internal Revenue Service (yeah, right)

Here’s what the email said -

INTERNAL REVENUE SERVICE
United States Department Of The Treasury

Over 130 million Americans will receive refunds as
part of The White House program to jumpstart the economy.

Our records indicate that you are qualified to receive the
2008 Economic Stimulus Refund.

The fastest and easiest way to receive your refund is by
direct deposit to your checking/savings account.

Please follow the link and fill out the form and submit
before May 17th, 2008 to ensure that your refund will be
processed as soon as possible.

Submitting your form on May 17th, 2008 or later means that
your refund will be delayed due to the volume of requests we
anticipate for the Economic Stimulus Refund.

I don’t know about you, but it seems to me it should be called the utility stimulus payment. By the time I paid off all the winter utility bills and put gas in the car…

Real Whipped Cream?

Boy, the eyebrows were raised when I brought out real whipped cream to go with the strawberries tonight.

My sister said that she liked strawberries and bananas with cool whip for breakfast.

I said, “What the heck, didn’t you read the article about cool whip and whipped cream?”

Of course, my niece was very excited to find out that whipped cream was better for you and has fewer calories. Yes, there is a food heaven!

Good Food for Mom

I want to know who decided that good food has to be hard.  It’s not.

 

It’s Mother’s Day weekend, and many of you feel compelled to take mom out for dinner. Personally, heading out to fight the crowds and stand around forever waiting for a table is not really my idea of a good time. If that’s your cup of tea – have at it.

 

If you’d rather have a relaxing day – here are some quick easy ideas.

 

One store by me has Filet Mignon on sale – a 6 oz. steak for $4.99. The secret to a great tasting steak at home? Buy it and bring it home and cook it. Don’t put it in the freezer.

 

I soak mine in Worcestershire sauce for 15 – 30 minutes before grilling. A little garlic and fresh ground black pepper and you’re good to go!

 

Make a big salad full of all kinds of good things.

 

A baked potato or sweet potato.

 

Fresh green beans steamed til they’re crisp-tender, lightly coated with a little butter and maybe some slivered almonds for an elegant touch.

 

Maybe a white chocolate fondue with fresh strawberries for dipping for dessert?

 

All really easy stuff. Takes hardly any time at all.

 

Here’s another recipe that’s a little more elegant –

 

Bourbon and Brown Sugar Marinated Steak with Garlic Mashed Potatoes

 

Steak

¼ cup dark brown sugar

¼ cup minced green onion

¼ cup bourbon

¼ cup soy sauce (can be low sodium)

¼ cup Dijon mustard

½ teas. black pepper

couple dashes of Worcestershire sauce

2 lbs. flank steak

½ teas. corn starch

 

Mashed Potatoes

3 lbs. red, Yukon gold or Idaho potatoes

4-6 garlic cloves, chopped

½ cup sour cream

1/3 cup milk

2 ½ Tbls. Butter

¼ cup green onions or chives

1 teas. salt

¼ teas. pepper

Steak

In a bowl, combine brown sugar, green onion, bourbon, soy sauce, Dijon

mustard, black pepper and Worcestershire sauce.

 

Place meat in a shallow dish and pour marinade over. Cover and marinate for

at least 8 hours, and no more than 24.

 

Just before grilling, drain marinade and reserve for gravy. Grill or broil the

steak about 5 min. per side. Watch carefully. Marinade will caramelize and may

flame. I prefer a non flaming grill, like a stove top or counter top.

 

In a saucepan, pour the marinade and cornstarch. Bring to boil and cook until

thickened.

 

Mashed Potatoes

Boil potatoes with garlic until potatoes are very tender. Drain. (keep garlic in)

Mash potatoes with garlic, sour cream, milk and butter. Stir in green onion or

chopped chives. Season with salt and pepper if desired.

 

I was looking through my cookbook for more ideas.

 

Pecan Chicken is another impressive dish.

 

Caribbean Chicken is fun. So is Mole Chicken (chocolate chicken)

 

Honey-Ginger glazed salmon with grilled pineapple is all the rage these days – and really simple to make. I didn’t see any salmon on sale this week, but when you consider what you’d pay in a restaurant…

 

So, if you’re taking part in the Franken Foods Boycott – Good for you! There’s lots of great real food that’s super easy to make!

 

Gosh, I hate opening that cookbook. I always find all kinds of things I want to eat!
